Alizonne Friendly Curry Stew

Yesterday I had a fab day with drinking water but slipped up in the evening when I got home after my midnight shift 😦 The rest of my family had had this delicious curry with naan and so kindly saved me some :O And like a moth to the flames I flew to it *bows head in shame* So today I decided that I needed to make my own Alizonne Friendly Curry. I looked around online for some ideas and came up with:

1) Roasting broccoli, aubergine, spring onions, green pepper + 200g combined of mushrooms and courgettes in a baking tray. I sprayed the tray and veg with fry light and sprinkled with garlic salt and hot curry powder. I left these to bake until soft.

2) In a saucepan I added 400g of blended fresh tomatoes, 2 tsp of ginger powder, 1 tsp of dried corriander leaves, 1tsp of garlic powder, 1tsp of onion granules, 1 tsp of ground cumin powder and a pinch of garlic salt. I then added three big handfuls of fresh spinach and some boiling water and allowed it to simmer until the spinach was soft.

3) Lastly I look the veg out of the oven and mixed with the contents of the saucepan and left to cook for a further 3-4 mins.

4) I divided it up into three portions to last for three meals

And voila, an Alizonne Friendly Curry

Day one of Preparing for Alizonne

Although I have had a late start to the day (snoozed my alarm until midday!?!?! :O ), I’ve done well with drinking more water. I’ve been up for two hours and have already had almost a full litre 🙂 There’s hope for me yet! Right now I’m just eating away at my weetabix whilst wishing I wasn’t working from 4.00pm til midnight euuuggghh! On the plus side the water is rather filling as its taking me twice as long to eat half as much as I would normally eat so YAY for that 🙂 I might even shed a few pounds before starting Alizonne 🙂

Hmmmm…..what shall i have for dinner later????
